Abstract

Blockchain uses a distributed ledger system that has great potential to improve a supply chain and manufacturing process in several aspects, playing a key role in significantly increasing transparency and traceability, showing the consumer the traceability of each step. in the production chain. The general objective was to evaluate the use of blockchain technology as a tool to improve the traceability of the manufacturing process in the craft beer industry. An extensive investigation of the operation of Blockchain technology was carried out and its use in a manufacturing process was determined through a feasibility and applicability analysis. Three Venezuelan craft brewing companies were analyzed to make an implementation proposal, based on the Blockchain Hyperledger Fabric solution together with a secure, modular and easily scalable and implementable IoT (Internet of things) architecture for certification of manufacturing data, in addition to an economic impact analysis. As a result, we obtained a series of recommendations to implement this solution and thus allow greater trust and perception of quality for consumers, compliance with production processes and reduction of the risk of fraud.

Siro Tagliaferro, Universidad Metropolitana de Caracas (Venezuela)

He holds an MBA from the Institute of Advanced Studies in Administration (IESA) (2016) and a master’s degree in Data Science from the Central University of Venezuela (UCV) (2022). He is also part of the FSAE team as its Faculty Advisor and focuses on data analysis, supply chain studies, and industrial technologies. He has conducted research on the use of Data Mining and Machine Learning tools in market studies for national companies and some international firms.
